1/3 cup butter (room temperature)or margarine 3/4 but I use 1/3 cup brown sugar (not packed)
3/4 teaspoon vanilla 1 egg (room temperature) 2 mashed bananas (ripe to very ripe)or three 2 tablespoons sour milk **
1 1/2 cups cake flour Just remember for every one cup of all purpose flour remove 2 tablespoons of flour and replace with 2 tablespoons of corn starch. Sift it together a few times and there you go. 1 teaspoon baking powder
1/2 teaspoon baking soda
Pre-heat oven to 350°F Grease and flour an 8 inch square or 9 inch round cake pan .In a medium bowl whisk together flour, baking powder, baking soda and salt. In a medium bowl beat together butter, sugar and vanilla, until light and fluffy (approximately 3 minutes), add the egg and beat, add the mashed bananas and beat to combine.
- To the Creamed mixture alternately add the dry ingredients with the sour milk, beat on high until smooth. Pour into prepared cake pan and bake for approximately 30-35 minutes or until cake tester comes out clean. Let cool completely before frosting.
