Old Fashioned BANANA CAKE

                          

1/3 cup butter (room temperature)or margarine  3/4 but I use 1/3 cup brown sugar (not packed)

3/4 teaspoon vanilla 1 egg (room temperature) 2 mashed bananas (ripe to very ripe)or three 2 tablespoons sour milk **

1 1/2 cups cake flour Just remember for every one cup of all purpose flour remove 2 tablespoons of flour and replace with 2 tablespoons of corn starch. Sift it together a few times and there you go. 1 teaspoon baking powder

1/2 teaspoon baking soda

Pre-heat oven to 350°F Grease and flour an 8 inch square or 9 inch        round cake pan .In a medium bowl whisk together flour, baking powder, baking soda and salt. In a medium bowl beat together butter, sugar and vanilla, until light and fluffy (approximately 3 minutes), add the egg and beat, add the mashed bananas and beat to combine.

  1. To the Creamed mixture alternately add the dry ingredients with the sour milk, beat on high until smooth. Pour into prepared cake pan and bake for approximately 30-35 minutes or until cake tester comes out clean.  Let cool completely before frosting.
