9ounces all purpose flour (about 2 cups)
1 tsp baking powder
1and 2/3rd cup sugar (use less)
6 TBS butter
6oz 1/3rd less less-fat cream cheese
2 eggs
1/4th cup canola oil
2 TBS grapefruit rind
½ tsp vanilla extract
½ cup milk
½ cup fresh grapefruit juice
1 and 1/4th cups powdered sugar
Preheat oven 325 degrees
Coat 10 in tube pan with baking spray (flour)
Weigh or lightly spoon flour with knife with powder amix sugar butter cream cheese until light add egg, oil, rind and vanilla, add flour to milk to sugar mixture spoon into pan and bake 325 for one hour ten minutes.
Cool in pan ten minutes, invert cool on rack.
Place juice in pan and bring to boil. Cook until reduced to 3 tablespoons, about 4 minutes.
Stir in powdered sugar and drizzle over cake.
