Roasted Garlic Potatoes

  • Wash and cut up as many organic potatoes as needed for meal- I usually do 1 or 2 per person.
  • Crush 2 or more cloves of garlic onto the potatoes and toss with Olive oil.
  • Roast covered at 375 for 40 minutes, uncover and roast for an additional 15 minutes or until brown.

If top aren’t brown but potatoes are soft, just serve them flipped over with brown side up. These heat up well and go with everything. Typically I make extra servings.
