heat oven 400 degrees
1 1/4 (scant) cup of sugar Mix sugar and cornstarch in 2 qt sauce pan gradually stir in water 1/4 lemon mix.
1/3 plus 1 TBS cornstarch Cook and stir until mixture boils. Boil one minute
1 1/4th cup water
1/4 cup of lemon juice
Beat 3 egg yolks Stir egg yolks into hot mixture- boil for one minute.
Add butter, juice and if you have lemon peel-
3 TBS butter
1/2 cup of lemon juice
Fresh organic lemon peel
Pour mixture into the pie shell.
Meringue:
3 egg whites, 1/4 teaspoon cream of tartar
4 TBS sugar
1/2 tsp vanilla
whip/beat until glossy and full.
Spread on top of lemon mixture and bake @400 degrees for 8-12 minutes.
Let cool and refrigerate.
